The Rick Roll
my basic response to any sort of shot is to turn and roll for the legs. but sometimes people are too defensive and they wont engage my legs. at times like those, the rick roll comes in handy. this technique is not difficult, but it requires you to train the instinct to sprawl completely out of your head. instead you invite the leg grab. you can do this on someone who shoots on you as well ( and i have with much success) but in this demonstration i'm going to show it from feeding them the leg.
the rick roll gets its namesake from a popular internet pass time of baiting someone with a cool link like:

the competition clip was probably the funniest thing I've ever seen...there really was no difference between the demo and the clip.

Since we are seeing the heel hook... you ever seen a simple counter by just grabbing your own knee and pulling the opposite direction that is being hooked? I am not for sure if that makes since or not. Lets say my right heel is being hooked in the traditional way, instead of rolling to try to escape, I would just reach down with my right hand on my knee and pull my knee the opposite direction.

i understand what you are saying. in general spinning is not a good idea to stop a leg lock if the person you are fighting has a strong understanding of them. it can often do more damage to you if they understand toe-holds specifically. the only time i have hurt my training partners or opponents was when they have tried to spin away from me while i was doing a toe hold.
as far as grabbing your knee this will not make much of a difference if your opponent is applying a proper squeeze with their own knees. some people will try and grab their heel but this will only buy them a bit of time.
in general the best way to defend leg locks is to understand them. they should be heavily studied and taken seriously. unfortunately that is not the case in the majority of the grappling community.
for instance, in this video, kevin could have done a counter attack with his own leg lock forcing me to correct my position or defend. i had not properly hidden my inside leg so he only needed to place it under his armpit and do a heel hook in return. he tried to counter attack but grabbed the wrong leg (the outside and uncontrolled leg), so i ignored it and continued with my own lock. this is an example were a knowledge of leg locks would have kept him safe or possibly turned the match around completely.
